Dark green leaves like spinach are rich in vitamin K and C, iron, calcium and fiber, so this soup is literally a bowl of vitamins. I already love the way spinach tastes so its nutritional benefits are an added bonus. I thought I would share this simple spinach soup recipe that takes no time to make.
Begin to slowly fry the chopped shallots in a saucepan with a knob of butter. After they begin to sweat add in the washed spinach leaves a little at a time. Stir this mixture around for about 5 minutes and add in the chicken stock cube and a little bit of water if the consistency is too dry. Mix this around and begin adding the cream and white pepper. Now place the soup in a blender and let it slightly break the consistency. Pour the soup back into the saucepan and check for salt letting it simmer under low heat to intensify flavours. Serve with a sliced boiled egg and fresh white pepper.
