Here you have a new take on a mozzarella salad that I usually make during the summer time. I love the combination of strawberries and cheese and I find this a refreshing mixture of flavours and textures.
Optional: Glazed Balsamic vinegar
Slice the avocados and strawberries and pile on a plate. Rip large mozzarella pieces on top and add finely chopped chives. A drizzle of good quality olive oil to marinate the flavours and a touch of black pepper. To add a bit of sweetness to the salad, you can also make a balsamic vinegar glaze. Basically, add all the ingredients ( while continuously stirring) into a small sauce pan and let it slowly simmer until it forms into a thick glaze. Drizzle a few drops around the salad. Ps. this glaze is perfect for bread dipping.
