Love these lemon muffins that are perfect for brunch or tea time

Lemon Muffin ingredients (makes 12)

  • 1/2 cup of melted butter
  • 2 eggs
  • 1 cup milk
  • 1/2 cup sugar
  • 4 tbsp lemon juice & zest
  • 2 tsp baking powder
  • Pinch of Salt
  • 2 cups flour
  • 200 g cream cheese
  • Icing sugar for dusting

Chocolate glaze ingredients

  • 1 dark chocolate bar (over 50 % coco)
  • 50 g melted butter
  • 100 cream cheese or sour creme
  • 1.5 dl icing sugar

Garnish: Blueberries and digestive cookie crumbles

Muffin Directions

Begin by whisking the eggs and mix in the melted butter, milk and sugar. Mix in the lemon juice/ zest, salt, baking powder and flour ( Do not panic if the batter contains chunky bits- it does not matter).

Add the batter into your greased muffin tray and add a spoonful of cream cheese into each muffin. You can either leave the cream cheese exposed, or use a spoon to pull some batter over it. Place into the oven (190 C or 375 F) for about 20-25 minutes until they are golden around the edges. Sprinkle icing sugar as it comes out of the oven. Leave to cool as you make the glaze.

Glaze Directions

Chop the dark chocolate into smaller pieces and melt on top of a water bath. Mix in the melted butter, icing sugar and sour creme. If the taste is too sweet or thick, add in a bit of lemon juice. With a spoon, drizzle on top of the muffins. Garnish with blueberries and digestive cookie crumbles.
