Now this is a vibrant plate of colours. This salad is creamy and spicy in texture that really work well together. It makes a great starter (one avocado/person is enough then) or a nice light lunch. To make this more filling, add garlic sautéed tiger prawns or pieces of smoked salmon. I would scatter the prawns around the dish but add some of the salmon already in the stuffing. Now.. go make this dish and sit outside in the sun and indulge in these miraculous little flavours of joy.
Mix all the stuffing ingredients together and scoop into the centre of each peeled avocado. Add the chopped chilli, berries, black pepper and arugula. Ps. Serve immediately otherwise squeeze lemon on the avocados to keep them bright and green.
