These oven roasted peaches are easy to make and barely take up any of your time. The mixture of the juicy sweet peach and the salty cheese is a combination worth trying. This also works wonderfully in a grill mixed with blue cheese. Rosemary is an essential herb to this dish as its earthy flavour complements the other components on the plate.

Ingredients

  • Ripe Peaches (the seed is easier to remove)
  • Rosemary
  • Olive Oil
  • Ground Black Pepper
  • Feta Cheese
  • Oregano
  • Pea Shoot

Directions

Preheat your oven to 200 C. Halve the peaches and place onto an oven dish. Add oil, black pepper and twigs of rosemary. Place into the oven for about 25-40 minutes until they begin to soften. Drop the temperature to 180 C. after the first 10 minutes so they do not burn. Keep in mind that the temperature may vary depending on how ripe your peaches are. Once they are ready, take them out and let them cool for about 5 minutes before placing them on a plate. Crumble feta and sprinkle some herbs on top. Ground more black pepper.
