
Morning Bliss
I love the smell of baked goodies on an early quite Sunday Morning. I decided to bake something salty and sweet to satisfy both my cravings, so I created a sweet cinnamon apple tart and a salty peach feta tart. Now they are cooling on an oven rack and all I need is a steaming cup of earl gray to accompany them. These I will enjoy in the morning fresh air on the balcony watching the empty streets as the city still sleeps before we head off to the summer place.
These recipes are proof that you can create something delicious from fridge leftovers, I created them along the way and didn’t really even measure anything that properly. I garnished the salty tart with pumpkin seeds and the apple with more cinnamon and both have a little fresh herbs on them. On the side there is some lavender honey with a bit of some Spanish herb mixture & rosemary that worked nicely with both tarts.

Crust Ingredients (makes about 4 individual sizes or 1 large)
- 1/2 dl Room Temperature Butter
- 1 1/2 cups Plain Flour
- 1 Egg
- 1/4 cups Sugar
- Pinch of Salt
In a large bowl mix the softened butter and sugar so it becomes light and airy. Gently beat in the egg. Add flour and salt and mix into a ball. Flatten the dough and cover with cling film. Refrigerate for about 45 minutes until firm. Now you have the crust ready and you can begin to making the tart stuffings.
Apple Tart Ingredients
- 5-6 Pear Apples (usually a Granny smith is more common but I had this at home and it was super good)
- 1/2 cup Sugar
- 3 tbsp Butter
- Cinnamon
- Lemon Zest
- 2 tsp Flour
Directions
In a saucepan, add the butter and finely sliced three apples. Add in the sugar, flour, lemon zest and cinnamon and let it cook for about 10 minutes so they soften. Mash the apples (with the back of a spoon) so they become a sauce.
Take the dough from the refrigerator and roll it out on all your individual tart pans. Some pre bake the crust beforehand but I did not do this and it turned out nice and crunchy still. Add the apple sauce in the middle and add thin slices of apples on top. Brush the top of the tart with some melted butter that has cinnamon in it.
Peach Feta Tart Ingredients
- 4 Peaches
- Handful of Feta Cheese
- Rosemary & Sage
- 1-2 Spring Onion
- 200 g Sour Cream
- Butter
- 1/2 garlic clove
- 1 egg
- Black Pepper/salt
- Lavender honey
Directions
In a buttered saucepan, sauté the spring onion and grate in some garlic. Add in two finely chopped peaches, rosemary and sage. Add fresh black pepper and a pinch of salt. leave to the side to cool. Then mix in the sour cream, feta cheese and beat in 1 egg. Add the mixture into the tart base and add thin peach slices on top. Brush a bit of melted butter on top and a bit of lavender honey.
Place into a heated oven 180 C for about 30 minutes until golden brown. Leet it cool for a while so the tart base is easily removed. Garnish with pumpkin seeds, cinnamon and fresh herbs. Berries (rasberries & blueberries) would work nicely aswell.
