Today I thought I’d share with you a beautiful delicate salad recipe that is refreshing and a nice change for lunch. The most important element here is to use a selection of tiny salad leaves instead of large ones as this gives a gentleness and elegance to the look. These ripe sweet peaches release their flavours once grilled and the acidity of the lime juice is a needed balance. The raw courgette adds another degree of freshness while the pine nuts add texture and a creamy flavour. In the end, drizzle a bit of olive oil, salt flakes and ground black pepper.
