summer salad

… with blueberries, strawberries and my own little tomatoes

There is nothing better than fresh finnish pea’s in the summer time, they are so sweet and juicy making a delightful light summer salad. The dressing is simply a drizzle of avocado oil, a pinch of salt, ground black pepper with a few drops of thick balsamic vinegar to dip the bread in. The wonderful strachy texture of the pea’s adds a nice bit to the gentle salad. Oh and did you know that peas are low in fat and high in protein and fiber! They have a high level of antioxidants meaning that they create a strong immune system and have anti-aging benefits. The salad requires lots of herbs ( of choice) and spring onion along with a selection of green leaves. To make the salad more filling, you can add some lovely delicate white fish, buffalo mozzarella or even some parma ham with figs or melon. This salad makes a perfect Saturday lunch on the balcony with a nice cold glass of ice water and some rosé wine! Have a wonderful weekend xxx ps. let’s make someone smile today!
