‘Homemade Honey Almond Raisin Granola’

As we all know Valentines day is just around the corner so I wanted to share this lovely morning treat with you all as it makes me smile. Thus it is only appropriate to pass it forward to bring a little joy to you as well, after all, it is the gift of giving next weekend! This wholesome granola is simple but effective and it makes a great little gift for a friend or a special wakeup treat for your loved one that ultimately should be served with a morning kiss! If you prefer a little something more sweet for valentine morning, I will soon be sharing a muffin recipe! So stay tuned! I feel this nutty honey granola treat is a perfect wake up call as already the baking process brings is an explosion of lingering flavours of vanilla, honey and cinnamon. yum yum, simply delicious.

How to make the honey granola
  • 2 cups old-fashioned oats
  • 1/2 cup raisins
  • 1/2 cup finely chopped almonds
  • 1/2 cup light brown sugar, packed
  • Handful of flax-seed
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 3-4 tablespoons of canola oil
  • 4-5 tablespoons of honey
  • Vanilla pod seeds

In a bowl, mix together the dry ingredients (oats, almonds, brown sugar, raisins, flax-seed, cinnamon and salt). In a saucepan heat the canola oil and honey until warm and stir in the vanilla seeds and cinnamon. Pour the mixture over the oats and mix thoroughly so all gets coated. Spread evenly on an oven tray that has been lined with baking paper. Bake in the oven for about 20 minutes in 150 degrees celsius until the granola has turned slightly golden. Let it cool before serving.

To make the yogurt breakfast: Serve the granola with your favourite yogurt (this time I used strawberry but it is lovely with thick greek yogurt). Sprinkle some toasted nuts on top, coconut flakes, blueberries and baby mint leaves. Serve with a good morning kiss.

      • Oh wonderful! I love Italy. This Semptember my man and I are actually flying from Santorini to Rome and driving around. We are stopping at Umbria, the rivera and will for sure visit Cinque Terre, a masseria near Verona and another near Sienna! I cannot wait and please if you have any tips, let me know =) I think we will take the train to cinque terre and wander around the entire day or two! xxx
