This lovely vegetable juice is a great way to start the morning. It is bursting with colour and brings a little sunshine to the breakfast table. Quite frankly I’m a little surprised I haven’t tried this recipe before as I am a huge lover of carrots! There has been a lot of talk about the health benefits of carrot juice and it seems to be a trendy juice amongst health lovers. I’m not surprised though because it has a wonderful mild and sweet taste to it and is packed with all sorts of goodness. It will become a regular for me too! I added lemon to my juice for an extra kick! Carrots are low in calories and are one of the richest sources of vitamin A and B and they have a high mineral content; calcium magnesium, potassium, iron etc. I went to the flower store the other day and bought some lovely herbs, orchids and green leaves to add a bit of spring feeling to our home. So I topped of our juices with a bit of fresh thyme, oregano and parsley. My kitchen has a bit of Provence touch to it at the moment and I’m loving the scattered herb pots here and there.
