‘What’s for lunch honey?!’ Crunchy garlic cauliflowers with a healthy clean and very herbal green dressing.

Especially on a Monday, we crave for easiness combined with comforting delicious flavours. We often want something quick for lunch that needs no fuss and requires little attention. Well, I have the perfect recipe for you as this does not get any easier! You can adjust it to your needs and perhaps add some protein to the side to make it more filling. However, I love that fact that this beautiful cauliflower is getting its well deserved headlight with its nutty mild flavour. The cauliflowers are steamed quickly and then sautéed in a bit of butter and garlic to bring forth its earthy flavour. The garlic and butter are an essential step, giving the vege that wow factor. During the week, I try to incorporate as much vegetables as possible to my diet and this warm salad is a new intriguing way to have cauliflower. To this dish, I’ve sprinkled some chilli flakes and walnuts on top to add some heat and more crunch. Simply perfect! The dressing is what makes it interesting and fresh and it makes all the difference in the world, that you make it yourself.

Speaking of dressings, I often love to try making different kinds from fresh herbs and once you get the hang of it, you learn never to buy store-bought dressings any more. Home made dressings taste so fresh and clean, completing your salad the way you want to. This cauliflower lunch is packed with delicious creamy flavours, giving that comfort filled feeling even though it is extremely healthy and somewhat light. This salad also makes a great side dish with your fish, chicken or a lovely steak.

Parsley Avocado Dressing

This dressing has a tangy, fresh and velvety taste to it. The zesty flavours of the parsley push through the creamy avocado making it a delicious combo. Parsley is a rich source of flavonoids and antioxidant vitamins, A, K and C thus protecting against inflammation, heart disease and cancer. This dressing is very flexible, feel free to adjust the amounts of ingredients to your liking. To make the dressing, blend together all the ingredients below:

  • 5 miniature avocados (2 normal size avocados)
  • 1-2 large handful of parsley
  • Pinch of Maldon salt/ ground black pepper/ lemon juice
  • 3 tablespoons of greek yogurt
  • Grated parmesan (optional)

To make this warm vegetable salad, all you have to do is steam some cauliflower, leave it al dente, as a little crunch is always nice. Sauté them in some butter and garlic for a couple of minutes so they get a wonderful golden colour. Let them cool a bit before adding the Herbal dressing on and garnish with fresh herbs, chilli flakes and walnuts.
