Wow I cannot even begin to describe the sweetness of this bright orange mango. It was succulent, aromatic, fleshy and deeply satisfying this morning. This mango comes from south-east Asia that we recently purchased from the Asian store. It brings me back to our holidays in Thailand where I ate spectacular tasting mangos every single morning, I couldn’t get enough of them.
This sweet breakfast easily passes for a healthy dessert and would be great for a brunch table. it has a Mediterranean feeling to it, almost something you could get from Greece. The base is a mixture of greek yogurt and quark with a splash of fresh pineapple and lemon juice. Then I’ve added strawberries, mango, chia seeds and cashews on top. I drizzled some honey over everything to add a gloriously golden colour to the plate. The pineapple and lemon juice add a bit of freshness to the sweet flavours, making it just heavenly to eat! Not a bad start to the morning.
