‘Sunday Green breakfast’

Good morning!

The sun is out and sky is bright blue this morning, a lovely change from last nights heavy rain! I’m feeling much more alive today now that the 1st of May festivities are over. If you follow me on instagram (@xoamysnordic) you could see what are our Friday was all about; good food, friends & bubbly. With a bit too many glasses of champagne under my belt, today I am craving for an extra healthy green smoothie for breakfast, something that my body so desperately needs! Bring on the vitamins, antioxidants and hydrating smoothies! The month of May is dedicated to healthy foods, jogging, golf and spending time outdoors!

This velvety green smoothie is made from 1 avocado, 1 banana, large handful of spinach, 2 dates, squeeze of lime juice, 200g quark, a pinch of salt and a bit of cold water. You blend all the ingredients together and garnish with cashews, chia seeds, strawberries and coconut. It is energizing in all the right ways and it has a sweet and salty taste to it, lovely and soothing for sunday morning! Have a wonderful & relaxing day!
