Whats for lunch honey?!
I wanted to share this easy and delicious summer salad with you guys that makes a great light lunch. It is vegetable based, but is filled with salty and sweet texture. With a lovely hint of garlic in the background, summer zucchini’s make a great base for salads! Are you having your girlfriends over for a glass of champagne this weekend? Why don’t you serve this salad for them and add some smoked salmon slices or tiger prawns to the mix?
Ingredients
This colourful salad is a real summer gem. With the bounty of delightful summer vegetables available from farmers markets or even from your own garden, this allows summer salads to become a staple dish in our diets. During this time of year, I try to take advantage of as many local vegetables as I can, as they are at their best, tasting tender packed with lots of flavour and vitamins.
These slightly grilled (couple of minutes) thin zucchini ribbons have been gently coated with olive oil and brushed with garlic to form the base of the salad. I’ve then added juicy cherries & blueberries for a touch of sweetness and a variation of delicious green leaves for some texture. I added some parsley, a pinch of salt, ground black pepper and a squeeze of lime juice to merge all the ingredients. I sprinkled some toasted nuts in the end to add a salty crunch.
Really! Salad is a great way to consume zucchini. I always try to find recipes fit for summer veggies and looks like it’s the perfect one. I will also try to dip Zucchini ribbons in salt as I always do! It seriously enhances the taste.
