As I woke up really early today, I was able to treat myself to a comforting velvety breakfast, a pale green chia pudding that is too easy to whip up. It is sweet and crunchy and really it seems like a dessert, even though it is healthy filled with beneficial nutrients.
What you need?
- small handful chopped wheatgrass
- handful of mint leaves
- 1 tsp grated ginger
- 1/2 lemon
- 1 ripe banana
- 100g Quark
- 100g Greek yogurt
- 1 large avocado
Mix all the above ingredients in a blender until smooth. Pour the smoothie into a jar and add a cup of chia seeds into it and mix well with a spoon. Close the lid and place into the fridge for about 1/2- 1 hour before enjoying it! I love the softened seeds that keep exploding in your mouth, while the comforting green pudding creates a little piece of heaven.
