Healthy Vege Burger

This healthy burger is too delicious to pass by on.. It is bursting with flavour and a bit of heat where everything just marinades so well together. To make it more “burger-style” you could add a bun style bread to it instead, but I loved it with the seeds and nuts. The radish yogurt dressing brings together all the ingredients while the juices from the beets and spinach ooze after each bite. It makes the perfect friday burger-

Burger filling ingredients

  • Spinach (sesame oil, butter)
  • Beet Root (butter, shiraza, smoked paprika spice)
  • Raw Zucchini ribbons & kale
  • Avocado (chili flakes, lime juice)
  • Chopped basil and parsley
  • Hoi sin sauce

Directions

Begin by making the bread, it takes about an hour. Roast the beets in an oven until softened. Then slice the beets and fry in a pan with a bit of butter, shiraza and smoked paprika spice. Add a pinch of salt. Fry the spinach in some garlic and sesame oil until softened. Ready to build the burger: Over the bottom slice of bread, spread some avocado, chili flakes and lime juice. Add some kale. Place the beets, zucchini ribbons and spinach on top. Drizzle a couple drops of hoi sin and sesame oil on top. Add some yogurt dressing, basil, parsley. Add more avocado and another slice of bread.

Radish Yogurt Sauce Directions

  • 1/2 cup thick Greek yogurt
  • 2 teaspoons grated garlic
  • 1 teaspoon red wine vinegar
  • 1 teaspoon honey
  • ground black pepper
  • pinch of Maldon salt
  • 1/4 cup grated radish

Mix together thick greek yogurt, grated garlic and red wine vinegar. Add in ground black pepper, a pinch of salt and the grated radish. Stir in honey to sweeten.
