The great thing about this recipe is that you do not need an ice cream maker for it. The ice cream takes under 10 minutes to make and then you just let it solidify in the freezer. The flavour is creamy and smooth with a hint of coconut in the background, just like the real deal. A scoop of ice cream is topped with coconut flakes, blackberries, mint leaves, walnuts and cinnamon. The all around combination is sweet and refreshing with all the toppings.

In a bowl, whip the cream until the peaks stiff. In another bowl, stir together the condensed milk, coconut extract and cocoa powder. Then fold the condensed milk mixture into to the whipped cream. Pour into a container, cover with a lid or cling film and place into the freezer for at least 6 hours. I did mine for overnight.
