I was finally reunited with this appetizer of paprika, garlic, anchovies and olives that I had been dreaming of ever since last year. Everything about the dish is so simple that’s probably why it is so amazing in the first place. A simple meal is topped with a potent espresso with the perfect little foam on top surrounded in a setting of saturated walls and glistening streets. The old town of Nice has a beautiful pinkish reflection at sunset, a facade quite smoothing to the eye, a warm hue of calmness that is ever so often interrupted by the buzz of a scooter that glides through the narrow pathways. The tall buildings almost protect the tiny pathways as they lean over to give you shade. Just beautiful, if you remember to stop and glance for a moment.
