Don’t let the fancy name fool you, this is possibly the simplest dish to whip up in minutes and if you are not found of garlic, I suggest you leave the page instantly! The raw garlic is key in this recipe, it gives the vegetables a real kick. Basically you can use which ever vegetables you prefer, but make sure they are firm enough to be grated. I love the combination that I have used, the cabbage is my favourite. Beetroot is great too or rather yellow beets as they do not stain everything red. I also love the consistency of grated broccoli as it breaks down into tiny pieces. The raisins add a touch of sweetness and the chili gives it all a punch of spice. This appetizer is actually really healthy, a lot of raw vegetables and good creamy avocado paste, you would never believe how delicious it is. Even my meat-loving husband loves this combo!
Avocado Paste
- 2-3 large Avocados
- 2 grated garlic
- Squeeze of lemon juice
- pinch of salt
- ground black pepper
- 2 large tbsp greek yogurt
Blend together into a smooth paste
Vegetables
- Carrots
- Broccoli
- Cabbage
- Chopped raisins
- swedish turnip
Garnish: drizzle of walnut oil, chili flakes, black pepper, pinch of salt, bean sprouts
Directions
Make the avocado paste by blending all the ingredients together into a smooth consistency. Grate all the vegetables into a bowl and chop the raisins into smaller pieces. Chop the cabbage into thin slices into the bowl. Mix the avocado paste with all the vegetables and place cling film on top and leave into the refrigerator to set for about 15 minutes. Ready to plate: Using a mold, place the vegetable mixture onto the plate. Garnish with chili flakes, ground black pepper, a pinch of salt, bean sprouts and a drizzle of walnut oil.
