Caramelized figs & Hyacinths

WHAT?! Only ten more days until Christmas Eve! It really feels like we just came back from our honeymoon yesterday, how did time pass by so quickly (once again…)? I cannot believe my nephew is turning six months in just a matter of days, it really feels surreal how fast he is growing right under our eyes. I have had an intense of a month with literally non-stop of work and only (without any exaggeration) two days off during all that time and that includes the weekends. I have managed to squeeze in hosting several christmas parties and a night out so you can imagine I have felt sleep deprived to say the least!  I haven’t had much time to capture the spirit of Christmas, until today as I finally finished everything and can relax until Christmas and New Years! With that being said, I have Celine Dion’s ‘These are the special times’ album playing in the background, while I have a table full of hyacinths, an espresso and a plate of caramelized figs ready to set me off into Christmas spirits.

How to cook figs:

Halve figs. Sprinkle with brown sugar on the meat side. On a hot pan with a good amount of butter, place the figs in it with the sugar side facing down. Cook for some minutes and turn over once caramelized, sprinkle with a bit of salt. Serve with shaved brazilian nut and hemp seeds. You can try with a slice of blue cheese and walnuts, a delicious combo!
