Thinking about what to serve for tomorrow as the year changes ? A few days ago we made some mini cream cheese “blinis” that work well with all kinds of fish and seafood or in contrary some dessert cheese and figs. These tiny delights also make a gorgeous fancy breakfast in bed with a glass of champagne or an espresso, perfect for the 1st of January.
Cream cheese Blini Recipe
- 1 cup flour
- 100g cream cheese
- 2 teaspoons baking powder
- 1 cup Milk
- 1 egg
Mix together all the dry ingredients (flour, baking powder, salt and chives). In another bowl, whisk the egg and cream cheese into a smooth consistency. Stir in the milk. Slowly mix in the wet ingredients with the dry so it becomes a some-what thick batter. Fry a tablespoon at a time on a non-stick pan about a minute on each side.
Serve with smoked salmon and cream cheese, jumbo chili shrimps and sour cream and cranberry herring.
