Beetroot Burgers & Minty Green Dressing

I love these healthy beetroot feta burgers that are stuffed with avocado, spinach and topped with a minty dressing that brings all the flavours together. These burgers are colourful and full of flavour that will leave you craving for more. They are easy to make and you can play around with the ingredients or serve one patty in between a delicious nutty bread.

Beetroot burgers

  • 4-5 beetroot
  • 1 cups oats flakes
  • 1/2 cup spelt flour
  • 1 shallot
  • 200g firm feta
  • 3 garlic cloves
  • 2 tbsp olive oil
  • 2 eggs
  • 1 cup basil
  • salt/pepper

Filling

  • Avocado
  • parsley
  • oregano
  • spinach leaves

Green Dressing

  • 2 cup Spinach
  • 1 garlic clove
  • 1 cup mint leaves
  • tablespoon lime juice
  • 1 avocado
  • 1 tablespoon olive oil
  • salt/pepper

Blend together until a smooth

Directions
Grate beets, onion and garlic into a large bowl. Add olive oil, eggs, oats, spelt, salt, pepper and mix well. Then add chunky bits of the feta cheese. Leave to rest for about half an hour so the oats/spelt soaks up the juices and the mixture sets. Meanwhile you can do the green dressing in the food processor. Form patties with your hands from the beetroot mixture and cook them on a pan in butter until golden on both sides. Use the beetroot burgers instead of “buns” and fill them with delicious greens and the minty dressing. Garnish with more lime juice, pecan nuts and chili flakes.
