Easy Matcha Pancakes

Slow mornings with matcha pancakes are the way to start the new year. After an indulging Christmas season with rich amazing foods, the new year typically starts with lighter dishes that focus on good health. I’ll be sharing great recipes with you along the side of january and what better way to start the day than with these green healthy pancakes. They only intake a cup of flour and the wet ingredients includes a bit of honey, oat milk and greek yogurt. For an even healthier option, you could substitute the plain flour for which ever you prefer such as, rye, gluten-free/chickpea flour or even a mixture of oats. I love a savory breakfast, so naturally I prefer something salty as a topping and I find avocado to work well with the matcha. You could wilt some garlic spinach on top, toast some nuts, poach an egg or do the classic combination of berries, nuts and honey. These green little delights are energy boosting, yet hold that comforting feeling of a pancake that make mornings quite the bliss.

ingredients

  • 1 cup plain flour
  • 1 tbsp matcha power
  • 1 1/2 tsp baking powder
  • 1/2 cup + 1 tbsp oat milk
  • 1/2 cup greek yogurt (preferably thick)
  • 1 large egg
  • oil for pan
  • Garnish: avocado, hemp seeds, chives

Whisk all the wet ingredients in a bowl. Mix the dry ingredients in another bowl. Slowly whisk the wet ingredients into the dry so they just moisten.

Add some oil (coconut or any oil will do) onto a hot pan and add a large spoonful of batter ( I cooked 4 pancakes at once) and leave it to cook. Leave the pancakes for about 1-2 minutes so the surface bubbles, which means they are ready to be turned over. Garnish with chives, avocado and hemp seeds.

Other great options for toppings are fruit, berries, granola, greek yogurt, poached egg or with plain honey and nuts.
