If you’re not obsessed with matcha yet, perhaps this recipe will change your mind! Take your croissants to another level by coating them with a fern-hued glaze. You can’t help but think of spring when you see these little green beauties, that sprinkle an aromatic sweet layer.   Could you imagine how cute these croissants would look over brunch, perhaps topped with fresh berries or toasted nuts? Also, Valentines day is just around the corner, so why not surprise your loved one with one of these… The hazelnut topping adds another layer of crunch to the airy pastry and paired with an overly frothy cappuccino, your mornings will be that much extra special. 

Matcha glaze

  • 1 egg white
  • 2 cups icing sugar
  • 2 tsp matcha powder
  • 1 tablespoon cold water

Whisk together into a glossy paste and dip the croissant into it. Sprinkle some crushed hazelnut sugar on top and let it set before serving.
