Breakfast bliss
As I rub fresh sage leaves from the garden against the rustic loaf, my fingers coat with the most divine fragrant. A few birds sing on the stone walls and the sound of bacon sizzling in the kitchen intensifies as they curl into mouth-watering golden slices. I sneak one in my mouth and look outside the villas window with hot tea pressed against my hands and soak in the feeling of these Umbrian mornings. It’s dreamy here, the magic in the rising sunlight, the sounds of nature and the flavours of all the organic produce!
Toasted country loaf with a spinach, crispy bacon and soft burrata accompanied by farm eggs is what breakfast bliss is all about! Such a simple but glorious way to start the day & now it’s time to hit the pool…

Cut slices from the country-style loaf and gently coat the sides with a bit of olive oil, a pinch of salt and rub the sides with sage leaves. Place the loaf on a grill (or oven will do) and cook until golden and crispy for under 10 minutes. Top the loaf with spinach leaves, crispy bacon and generous chunks of burrata. Add ground black pepper on top and a tiny squeeze of lemon juice
