‘She dreams more often than she sleeps’
Today we celebrate all the amazing women around the globe and embrace all our differences! Happy Women’s Day beautiful ladies! ♡ We women should stand together as a united front and make this world a stronger safer place. Never underestimate the power of a kind women as kindness is a choice that comes from incredible strength. Be strong but not arrogant, have a voice but don’t be obnoxious, speak your truth, with respect and keep empowering each other, without jealousy. We are all different and that’s the beauty of it all! Equality should have no preference and I’m proud that in Finland, woman have equal rights to men that gives us an amazing platform for the same opportunities in life. There is something about a woman with a loud mind that sits in silence, smiling knowing she is fierce and strong inside. My wonderful hubby surprised me with a bunch of roses to bed so I decided to take advantage of staying in my pj’s a little longer with an amazing healthy green omelette. And as Marilyn Monroe said ” a girl doesn’t need anyone who doesn’t need her“, so ladies wear that smile like a loaded gun!
Nevertheless, this divine green omelette will easily become your favourite breakfast companion if you are into healthy treats. The actual omelette turns a deep forest colour from a garlic spinach pesto that gives the eggs an amazing kick of flavour. It is then topped with sautéed asparagus and zucchini ribbons along with fresh spinach leaves and salad leaves. A little chili flakes and green pepper add flavour along with a generous amount of herbs and hemp seeds. This green breakfast is a real showstopper and it tastes like a plate of spring!
Healthy Green Omelette
|1 cup spinach, 2 garlic cloves grated, 1 tablespoon olive oil, 1 1/2 tablespoons pesto, 1 tablespoon milk
||In a bowl mix together all the ingredients with a hand-held blender into a smooth(ish) paste.
|3 eggs, black pepper, salt
||Whisk 3 eggs with a fork in a small bowl and add ground black pepper and a pinch of salt. Pour the eggs into the above mixture.
||In a hot pan, add some butter and pour the mixture in. Let the omelette gently simmer until the surface cooks and once ready, slide off onto a plate.
|Toppings: asparagus buds, zucchini ribbons, spinach leaves, salad leaves, chili flakes, green pepper, herbs (oregano, thyme, mint), hemp seeds
||On a hot pan, add a bit of butter and gently fry asparagus buds and zucchini ribbons. Place on top of the omelette and add spinach and salad leaves on top. Sprinkle some herbs, chili flakes, green pepper and hemp seeds on top.|
