Green Smoothie Bowl

  1.  1 cup a mixture of beetroot leaves & kale
  2. 1 cup a mixture of spinach & mint
  3. 1 juice of lemon
  4. chunk of ginger
  5. 1 avocado
  6. 1/2 cup quark or greek yogurt
  7. 1/2 cup ice cubes
  8. splash of water

Garnish: Mint leaves, parsley, bean sprouts, hemp seeds

With the temperature reaching up to 30 degrees celcius on a daily basis, you begin to crave for cold light foods. Farmer’s markets are filling with seasonal veggies and fruit, so it’s time to take full advantage of all the local goodness! I started my day with this green bowl, packed with vitamins and great energy! I had left over beetroot leaves from the other day and used some of them in this smoothie as well. Beet leaves are high in vitamin A, C, protein and dietary fiber.
