‘The secret is in the topping’
Good morning Sunday & all you beautiful people! Yet another glorious morning here in Helsinki, the sun is out and it feels like summer is still in full swing! I’ve taken full advantage of these beautiful days as you never know, when fall decides to take over, even though the transition seems distant with weathers like these! I‘ve going to embrace it to the very end as this is so rare for us! Just as I finished writing this, it started to rain! haha
My hubby has been away the entire weekend so I have fully enjoyed time to myself; did some pampering, been working out, started readying a new book and seen some friends. The last two weekends have been all about crayfish, so it was wonderful not having any major plans this time and just going with the flow. This morning began bright and early at 6am when Bella wanted to go out for a walk, then I went jogging- hence the slow post-breakfast on the balcony. Gooseberry season is here, I picked some home from the countryside a few weeks ago and picked some more from my hubby’s moms bushes in her backyard. Gooseberries are August’s little jewels that taste like candy, but far better! They are just so delicious packed with vitamins so naturally, I’ve topped my morning bowl with lots of gooseberries and blueberries. But, the secret to this smoothie bowl happens to be the other topping; toasted rye oat flakes. I was craving for something other than granola or nuts, so this morning I decided to test out toasting plain rye oats on a dry pan with a bit of salt. I toasted them until they became slightly golden and let them cool before eating. The end result is a slight hint of popcorn making these healthy flakes the easiest addition to morning bowls! Maybe I will try flavouring them the next time?!
I have to say, I love sitting on our balcony, it’s so fresh and white and I love having greenery and flowers all around me. I love that the streets are so calm… I think I’ll sit here for a little while longer and continue reading a few pages of my new book. Whats the rush, it’s sunday after all!
August Green smoothie bowl
- 1 cup oat milk
- 1 banana
- 1 avocado
- 1 tablespoon flax seeds
- 1 cup kale
- 1 cup spinach
- 1 celery stalk
- 1 tsp honey
garnish: gooseberries, blueberries & toasted rye oats
