‘ Sometimes a classic french toast is all you need’

Of course eaten in bed is what makes this recipe extra cozy… As the weekend is approaching, I wanted to share a classic french toast recipe for those slow saturday and sunday mornings. We made these rustic sweet loaf slices at the countryside last week that were topped with ricotta and berries accompanied by numerous cups of coffee in bed. I love this version of a “french toast” as the crispy bread blends nicely with the creamy ricotta and acidic berries.

Ingredients (serves 2-3)

  • 2 eggs
  • 2-3 tablespoons whole milk (or cream)
  • rustic loaf sliced
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • pinch of salt
  • 1 tsp vanilla extract
  • 4 tbsp butter

Garnish: blueberries, honey, ricotta, basil leaves, blackberries, granola

Directions

Add butter to the bottom of a saute pan (medium heat) until it is covered. In a bowl, add the eggs, cream, spices, vanilla and salt & mix well. Soak both sides of the loaf in the egg mixture and place in the saute pan. Cook both sides until golden for a few minutes. Serve with fresh ricotta, honey (or syrup), blueberries, granola, blackberries and baby basil leaves.
