December 9th- festive gingerbread tarts
A few days ago, it was Independence Day in Finland so a little festive tart was in order. The great thing about this tart is that it sets overnight so you can make it the night before, taking away any stress if you have guests coming over. If you are running short in time, the tart should ideally set for at least 4 hours depending on the consistency of your filling. Another great thing about this tart is that you can use your favorite pudding in the filling. In Scandinavia we have quarks that are almost like flavored healthy puddings. For this recipe, I used a gingerbread flavored one, but anything from chocolate to toffee will do. The cake is marinated with sweetness from dates, vanilla paste and pieces of dark chocolate that add a little bit of texture to the bite.
