Healthy Blueberry energy balls

’High Protein Energy balls’

Now, this is the first time ever testing any kind of healthy ball, but they are something where you master the correct texture after a few times of making them. I must admit, they tasted even better the following day, when they solidified and intensified in flavor. I am a lover of all things that include nuts, oats, berries and dates so there was no doubt in my mind that I wouldn’t be a lover of these kinds of raw balls. With a slight sugar craving in the back of my palette, I opted to make energy balls as I knew they were quick and easy. These are a great little snack to have in your fridge especially if you are craving for a little bit something sweet.

Ingredients

  • 1 cup frozen raspberries (When using frozen raspberries, remove them from the freezer 15 minutes before you start making this recipe)
  • 2 cups unsweetened coconut shred
  • 1 cup cashews
  • ½ cup dates (de-seeded)
  • 1 tsp vanilla extract
  • 1 tablespoon peanut butter
  • Pinch of salt

Directions

In the food processor add coconut shreds, cashews, and dates. Pulse until everything is finely broken. Then add vanilla extract, a pinch of salt, and frozen raspberries. Pulse till the mixture is broken down and sticking together. Pour the mixture to a plate and using your hands, shape the mixture into tbsp sized balls. Coat with shredded coconut. Place them into the fridge for 30 min to set.
