I’ve got my woolen socks on and ready to curl up under a blanket on the couch

Today I made a tasty beetroot soup that has the most vibrant autumn colours. It really does not need much to make it special, beets are sweet and full of flavour this time of year. This rustic soup is healthy and comforting and much needed on a dark evening like today. Ps. beetroot has tones of vitamines, minerals and antioxidants. One day I’ll make a smoothie out of them!

Directions

Let’s make some soup! Boil about 6-7 large beetroot until they become soft. Drain the beets and slice into smaller pieces. In a saucepan, sauté chopped garlic, onion, carrot and some celery with a bit of butter. Stir until translucent and then add the beets with a bit of salt and pepper. Cook for about 5 minutes. Add in some cream, blend into a smooth paste and add the rest of the cream. Garnish with raw slices of carrots, herbs and a dollop of thick yogurt.
