Our Easter began early with a bouquet of fresh crispy roses and a macha latte in bed. I’ve mastered the perfect latte that consists of a teaspoon of macha powder, mainly warm oat milk but the extra foam is created by skimmed milk. Bella is lounging on a freshly washed mat observing our every moves. She knows we are soon going for a walk into the woods. I’ve also tested a new chia pudding recipe that is lusciously thick and sweet.

Coconut chia pudding with honey and pear

In a maison jar, add chia seeds, shredded coconut, a pinch of salt and a cup of coconut milk. Add 2-3 tablespoons of apple juice. Stir and cover with plastic wrap and place into the fridge for 3 hours. Meanwhile I glazed some pear slices in the oven (20 min 170 C) that had a bit of honey and cinnamon on top. Garnish the pudding with walnuts.

 

This Easter is going to be super fun, we have plans to get out of the city, spend a lot of time outdoors, cooking good food, sipping a bit of wine and spending time with family. Easter is all about soft tones and calmness, glimpses of Spring and lazy mornings..
