The concept of a grilled mango came as a pleasant accident.. a bit like tarte tatin (fell on the floor and realized it was better upside down) that accidentally came to be as it is today. I was grilling paprika on a gridiron pan while simultaneously eating some mango… not really paying attention to what I was doing, I accidentally dropped a piece of mango on the pan… to my curiosity I let it sit there for a while before popping it in my mouth. Ahhhh the sweet sensation that exploded in my mouth. It tasted totally new, like fresh juicy marmalade with an interesting creamy texture. Wow! I loved it and if I would have had bree cheese at home, that would have been a perfect combo with it! So, I decided to change my menu and made a grilled mango salad. So if you do make this at home, I say add some bree cheese to it as well. I think this grilled mango could make a great canapé or on a cheese platter or even as dessert with a scoop of old-fashioned vanilla!
Begin by cutting cut some what thick slices of the mango so they do not stick/ break on the gridiron pan. Grill them on a hot gridiron or grill (no oil needed) turning them around letting them roast and gain some colour. While the mango is cooking prepare the salad.
Begin by toasting some nuts. Then place all the salad ingredients on a platter. Once the mango is cooked add them in the salad and serve them warm. Dress the salad with good quality olive oil and black pepper. Add a pinch of salt if needed.
