Good morning Sunday & all you beautiful people! Yet another glorious morning here in Helsinki, the sun is out and it feels like summer is still in full swing! I’ve taken full advantage of these beautiful days as you never know, when fall decides to take over, even though the transition seems distant with weathers like these! I‘ve going to embrace it to the very end as this is so rare for us! Just as I finished writing this, it started to rain! haha

My hubby has been away the entire weekend so I have fully enjoyed time to myself; did some pampering, been working out, started readying a new book and seen some friends. The last two weekends have been all about crayfish, so it was wonderful not having any major plans this time and just going with the flow. This morning began bright and early at 6am when Bella wanted to go out for a walk, then I went jogging- hence the slow post-breakfast on the balcony. Gooseberry season is here, I picked some home from the countryside a few weeks ago and picked some more from my hubby’s moms bushes in her backyard. Gooseberries are August’s little jewels that taste like candy, but far better! They are just so delicious packed with vitamins so naturally, I’ve topped my morning bowl with lots of gooseberries and blueberries. But, the secret to this smoothie bowl happens to be the other topping; toasted rye oat flakes. I was craving for something other than granola or nuts, so this morning I decided to test out toasting plain rye oats on a dry pan with a bit of salt. I toasted them until they became slightly golden and let them cool before eating. The end result is a slight hint of popcorn making these healthy flakes the easiest addition to morning bowls! Maybe I will try flavouring them the next time?!

I have to say, I love sitting on our balcony, it’s so fresh and white and I love having greenery and flowers all around me. I love that the streets are so calm… I think I’ll sit here for a little while longer and continue reading a few pages of my new book. Whats the rush, it’s sunday after all!

August Green smoothie bowl

  • 1 cup oat milk
  • 1 banana
  • 1 avocado
  • 1 tablespoon flax seeds
  • 1 cup kale
  • 1 cup spinach
  • 1 celery stalk
  • 1 tsp honey

garnish: gooseberries, blueberries & toasted rye oats

 

Summer Green Bowl

Green Smoothie Bowl

  1.  1 cup a mixture of beetroot leaves & kale
  2. 1 cup a mixture of spinach & mint
  3. 1 juice of lemon
  4. chunk of ginger
  5. 1 avocado
  6. 1/2 cup quark or greek yogurt
  7. 1/2 cup ice cubes
  8. splash of water

Garnish: Mint leaves, parsley, bean sprouts, hemp seeds

With the temperature reaching up to 30 degrees celcius on a daily basis, you begin to crave for cold light foods. Farmer’s markets are filling with seasonal veggies and fruit, so it’s time to take full advantage of all the local goodness! I started my day with this green bowl, packed with vitamins and great energy! I had left over beetroot leaves from the other day and used some of them in this smoothie as well. Beet leaves are high in vitamin A, C, protein and dietary fiber.

Green Smoothies, 3 ways

Drink as many green smoothies/juices as possible to keep your body healthy, to brighten your outlook and save you from a whole host of health maladies. Creamy Smoothie bowl

  • 1 avocado
  • 1 banana
  • 1 tablespoon chia seeds
  • 1/2 – 1 cup greek yogurt or quark
  • handful basil
  • handful watercress
  • handful kale

garnish: cranberry powder, spinach and kale leaves, coconut flakes, avocado

This breakfast bowl has a subtle taste of basil and the thick creamy texture is comforting and fulfilling. Watercress is strong in alkaline hence it is used as a blood purifier and helps clean the body from toxins. Topped with cranberry powder that is packed with vitamins.

Cleansing green juice

  • Handful of parsley
  • chunk of ginger
  • 1 lemon
  • 1 celery stalk
  • 1 cup spinach
  • water

A detoxing green juice to boost your metabolism in the morning that helps to cleanse and remove toxins from the body. Hydrating, anti-bloating and antioxidant filled juice that is amazing for the body and skin.

Pale Green Smoothie

  • 2 tablespoons flaxseed
  • About 1/2 cup chopped broccoli
  • handful mint leaves
  • 1/2 banana
  • 1/2 cup of oatmilk
  • chunk of ginger
  • 1 celery stalk
  • cucumber chunk
  • handful of spring kale

Nourishing and refreshing, this pale green smoothie makes a quick and healthy drink that starts the day with immune boosting ingredients and  anti-inflammatory properties.

‘Sunday Spring Home’

My favourite spring mornings are made of sunshine bursting through the window, numerous cups of coffee and healthy smoothie bowls in bed. Our house is scattered with all kinds of blooms giving this sunday a spruce of spring.

Green Smoothie ingredients

  • 1/2 cup  oat milk
  • handful parsley
  • handful mint
  • chunk of ginger
  • 1 cup spinach
  • 1 avocado
  • 1/2 banana
  • tablespoon flax seeds
  • 1 celery stalk

Blend into a creamy mixture and garnish with blueberry, mint, chia and hemp seeds.

The Art of Mindfulness

To me the smell of fresh coffee is one the great inventions of the world, but to drink it in the wilderness is an entirely new experience…

It’s one of those mornings, where the magical snow-dusted countryside shows what Finland or being finnish is all about. I’ve let my worries melt away in the sauna and allowed the comforting calmness of the nature to do its wonders. Getting away from the city allows me to connect with the natural world and the less I get off this, the more dimmer I feel. Our early morning began with a beautiful frothy cappuccino on the frosty lake with an arctic green smoothie bowl full of berries. With the low temperature, the berries almost tasted like candy as they cooled down and become a bit harder. Not a bad way to start the day, I would say!

Nature reminds us that we are part of a large world that is charged with mystery, hidden beauty and wonders to be discovered. I love the crisp dry air that is crackling with energy, the life that you find hidden if you look closely and the actual feeling you get that cannot match with any manmade creation.  A person who spends time in nature can vouch for the effects it has on the mind, body and soul. It’s called freedom.

Apparently people living in the Nordic countries belong to one of the happiest in the world because of their close relationship to nature that has given them an appreciation for a healthy ecological lifestyle. The Nordic way of life has an understanding for authenticity and seeing the beauty around us that correlates to a happier healthier lifestyle.

There is so much magic to these snow coated trees.  The intensity to the whiteness almost gives you slight blindness, but makes you appreciate the brightness so much more because of the darker season amongst us. This moment with my hubby on the lake with my cozy sweater, hot mug and fur hat in absolute silence is what the countryside is all about.

Through photography, I’ve learned to become for mindful. Many can say, it’s such a cliché word that often gets thrown around too easily. But practicing mindfulness has heightened my awareness as I wait for the perfect moment to be captured. This allows me to be present and aware of the moment without distractions. Practicing to do so, has given me the art of discovering a whole new world and taking in the surroundings, the real surroundings. My mind is purely focused on what I see and not thinking about my responsibilities and this gives a great sense of peace and a respect towards nature.

2x Amazing Green Juices

Do you ever have those mornings when coffee is just not enough? No matter how many cups you drink, you feel as if you are lacking in energy and need a quick re-boot to the system. This is the time to turn to green juices, as they are pure aroma theraphy for the morning. These green juices are on the top of my list that I blend on a regular basis to give my metabolism a boost and nourish my body with vitamins and antioxidants that remove toxins and heal the skin. The detox juice is delicious in flavour, a little sweet and fulfilling in texture while the latter is refreshing and extremely hydrating. Both juices are great to implement into your weekly routines to feed your body with all the green goodness! To make the juices, all you need to do is blend the ingredients and drink immediately or they last up to a day in the refrigerator. Green juices aim for optimal health as all the nutrients absorb into the body immediately when raw and in liquid form!

Detox Green Juice

  • 1 cup parsley
  • 1 cup baby spinach leaves
  • large chunk ginger (about 4cm x 3cm)
  • 3 small celery stalks
  • 1/2 cup cold water
  • 1/2 cup oat milk
  • 2 tbsp flax seeds
  • 1 mandarin

This detox juice has a great texture from the flax seeds with a bit of sweetness from the mandarin and a good kick from the ginger. I love to use a lot of ginger so, you can add less if you think this is too strong. The anti inflammatory ingredients above give your metabolism and immune system a real boost and cleanses the body from toxins. Incredibly alkalizing, this juice is packed with vitamins, minerals and antioxidants for a healthy body.

Glowing Skin Green juice

  • 1 cup cold water
  • 1 cup mint leaves
  • large chunk ginger (about 4cm x 3cm)
  • 1 apple ( or 1 cup pineapple)
  • 1 large celery stalk
  • 1 cup chopped kale leaves (or spinach+kale combination)
  • 1 juice of lemon/lime

This juice helps prevent cell damage and allows your skin to stay healthy, hydrated and give you that glow you are after! Vitamin C and A keeps your skin firm allowing it to radiant from within. Vitamin K lowers stress and naturally water keeps the skin from dryness which causes less wrinkles and flaking. Leafy greens are high in antioxidants and phytochemicals that help prevent inflammation that can cause skin issues. The soothing mint leaves not only give a refreshing flavour but also the salicylic acid in it helps keep the skin more clear. This juice is also great for digestion giving a boost to the immune system.

Green Juices & Vintage Roses

I couldn’t resist starting the day by taking pictures of this amazing bouquet my husband surprised me with yesterday. They are huge, I have trouble holding them together with both hands and the giant roses smell incredibly aromatic with the eucalyptus. They’ve managed to fill three vases in the house and now I have blooms scattered literally in every room. He certainly knows that flowers are a way to my heart.

I feel that the dark weather has taken a toll on my body, so I wanted to boost my energy and start the day with a cleansing green juice that is packed with vitamins. As I have mentioned before, drinking green juices can be the best thing you can do to your body as the green leaves are optimal for regenerating, purifying and healing your body. I love how the nutrition is instantly absorbed through liquid form giving your mind and body a blast of powerful goodness. Without going too much into detail, green juices are amazing for healthy glowing skin (vitamin C & E), improved energy, weight loss and have high levels of amino acids/ antioxidants that benefit in numerous ways. Everything is connected to each other; they help the skin/organs (liver) to remove toxins, improves immune system, helps sleep better, aid in cell growth (vitamin A) and give your body a real healthy boost. The key is to drink all kinds of dark leafy greens and vegetables in raw form and avoid adding too many fruit into the juice to avoid sugar.   • A few large pieces of fresh pineapple
  • about 1 cup cold Water

Autumn Smoothie Bowl

Homegrown apples are at their best in september and cinnamon season is knocking on our door so I thought it was time to introduce the flavours of fall. My brother and sister-in-law brought me a basket full of fresh apples from their countryside and I decided to start the day with an amazing sweet green bowl. With a hint of vanilla, cinnamon and nutmeg, this autumn bowl is a great welcome to september’s chillier days. The apples, avocado and banana add a creamy texture while the fresh herbs add a delicately fragrant finish.

Ingredients

  • 3 small seasonal apples
  • 1 cup spinach leaves
  • 1/2 avocado
  • 1 tsp vanilla extract
  • 1 tbsp hemp seeds
  • 1 tsp ground cinnamon
  • 1 cup oat milk
  • 1/2 banana

garnish: ground nutmeg, herbs of choice (I used mint, parsley, oregano flowers)

Blend everything in a blender until smoothie. Add more oat milk to alter the consistency

Fruit Free Low Sugar Green Bowl

This glorious bowl is low in sugar that is made only from green vegetables that gives you a balanced hormone production. It is a natural pick-me-up bowl that starts your day with a bunch of nutrients, protein and vitamins. Loaded with minerals and fiber to support a digestive cleanse, this smoothie regains your glowing skin and boosts your mood. I’ve never tried zucchini before in smoothies, but I love the creamy almost sweet texture it provides. This summer bowl is flavourful and velvety that is cleansing, energizing and detoxing. It is topped with chia, my favourite herbs and sweet nectarine slices but you can use what ever you prefer. To make it more filling mix, add some banana, almond butter, nuts/seeds or granola.

Ingredients

  • 1 avocado
  • 1/2 cup fresh mint
  • 1/2 cup parsley
  • 2 celery stalks
  • 1 cup baby spinach
  • 2 tablespoons flaxseed
  • 1/2 medium-sized zucchini (about 1 cup chopped)
  • 125 g greek yogurt (or coconut milk for a vegan version)
  • 1 date

Garnish: lemon balm leaves, parsley, basil, chia seeds and sliced nectarine

Directions

Blend all the ingredients in a blender until thick and creamy. If your blender will not pulse, add a splash more liquid.

For a dairy free or vegan version, substitute the yogurt for coconut milk. In this case to get a more creamier affect, I would suggest freezing the zucchini beforehand and instead of using the chia for garnishing, let it expand in a bit of coconut milk for texture.
